True Italian 3 Cheese Roasted Red Pepper Spinach Stuffed Shells

Delicious stuffed shells with 3 kinds of cheese, fresh spinach, and roasted red peppers. Quick dinner to serve to a crowd.

Ingredients 

  • 1 box Jumbo Shells Pasta
  • 1 box Fresh Spinach, sauteed
  • 1 Cup Ricotta Cheese
  • 1 package Mozzarella Cheese, shredded
  • 1/4 Cup Parmesan Cheese
  • 1/2 tsp Fresh Parsley , finely chopped
  • 1 Egg
  • 1 Medium Red Pepper, Roasted
  • 4 Fresh Garlic , finely chopped
  • 1 TBS Butter
  • 3 TBS Red Wine
  • 1 Jar of Marinara sauce, Your Choice

Instructions 

  • Preheat oven 375 degrees
  • Next, cook jumbo shells according to the box instructions.
  • Sautee the fresh spinach in olive oil, salt and pepper, and 2 garlic cloves finely chopped.
  • Add the butter, 2 garlic finely c hopped and red wine to a cup and heat in the microwave for 40 seconds.
  • Next, mix all the cheeses(1/2 cup mozzarella), spinach, red peppers, parsley, red wine mixture, and egg in a large mixing bowl. Refrigerate the mixture for 10 minutes for the egg to set.
  • Layer the Pyrex dish with marinara sauce and stuff the shells.
  • Top with Mozzarella cheese and cover for 20 minutes and then remove foil to the last 5 minutes.
  • Bake at 375 for 25 minutes.
