True Italian 3 Cheese Roasted Red Pepper Spinach Stuffed Shells

Ingredients
1boxJumbo Shells Pasta
1boxFresh Spinach, sauteed
1CupRicotta Cheese
1packageMozzarella Cheese, shredded
1/4CupParmesan Cheese
1/2 tspFresh Parsley , finely chopped
1 Egg
1MediumRed Pepper, Roasted
4Fresh Garlic , finely chopped
1TBSButter
3TBSRed Wine
1Jar of Marinara sauce, Your Choice
Instructions
Preheat oven 375 degrees
Next, cook jumbo shells according to the box instructions.
Sautee the fresh spinach in olive oil, salt and pepper, and 2 garlic cloves finely chopped.
Add the butter, 2 garlic finely c hopped and red wine to a cup and heat in the microwave for 40 seconds.
Next, mix all the cheeses(1/2 cup mozzarella), spinach, red peppers, parsley, red wine mixture, and egg in a large mixing bowl. Refrigerate the mixture for 10 minutes for the egg to set.
Layer the Pyrex dish with marinara sauce and stuff the shells.
Top with Mozzarella cheese and cover for 20 minutes and then remove foil to the last 5 minutes.
