Chicken White Bean Escarole Soup
Ingredients 1 large whole chicken, cleaned and cut into pieces2 carrots chopped2 stalks celery, chopped1 large onion, chopped1 tablespoon salt1/2 teaspoon ground pepper1 teaspoon poultry seasoning2 heads of escarole, chopped (using only the green stems) and chopped6 cloves garlic, minced2 cans of cannellini beans, drained and rinsed1 chicken bouillon3/4 cup shredded parmesan cheese1 block of Parmesan rind1 Chunk of Parmesan cheese, for serving
Instructions Make the Homemade BrothIn a large pot, add the whole chicken, carrots, celery, and onion.

Ingredients Ingredients:2 cans of cannellini beans, drained and rinsed¾ cup sun-dried tomatoes, chopped6 cloves garlic, minced2 large handfuls of spinach, chopped1 teaspoon oregano1 teaspoon calabrian chili2 teaspoons Italian seasoning1 bay leaf1 block of Parmesan rind2 carrots, chopped2 stalks celery, chopped1 package of chicken Italian sausage, cooked and chopped1 cup white wine, for deglazing4 cups chicken broth½ teaspoon salt½ teaspoon pepper2 tablespoons olive oil
