Savory Sunshine Crustless Quiche
A savory quiche is a delightful, versatile dish that can be served for any occasion. The combination of cheese and vegetables makes the flavors and texture of a quiche comforting and sophisticated. Serve for brunch or dinner with a side salad will complete the meal.
Ingredients
- 2 tbsp Olive Oil
- 2 Cups Fresh Spinach
- 8 oz Mushrooms sliced
- 1/2 Red Pepper, Minced
- 1 Garlic Clove
- 1/4 Cup Onion, Minced
- 1/8 tsp Salt
- 1/8 tsp Pepper
- Cooking spray
- 4 Eggs
- 1/4 Cup Fresh Grated Parmesean
- 1/2 Cup Mozzarella Shredded
- 1/4 Cup Feta Crumble
- 1 Cup Milk – Full Fat
Instructions
- Preheat the oven to 350 degrees.
- In a large saute pan with olive oil, cook the spinach, red peppers, mushroom, onion, and garlic, until soft. Add the 1/8 tsp salt and 1/8 tsp pepper to the mixture.
- In a large mixing bowl, crack and whisk the eggs, and add a pinch of salt. Then add the Parmesan, 1/8 tsp pepper, and milk. Stir gently.
- In the pie dish spray the bottom and pour the vegetable mixture inside. Crumble the feta on top then slowly pour the egg mixture and top with mozzarella cheese.
- Bake in the oven for 50 minutes or until the top reaches a golden brown.
