2CupsFresh Spinach
8ozMushrooms sliced
1/2Red Pepper, Minced
1Garlic Clove
1/4CupOnion, Minced
1/8 tspSalt
1/8tspPepper

4Eggs
1/4 CupFresh Grated Parmesean
1/2 CupMozzarella Shredded
1/4CupFeta Crumble
1CupMilk - Full Fat
Instructions
Preheat the oven to 350 degrees.
In a large saute pan with olive oil, cook the spinach, red peppers, mushroom, onion, and garlic, until soft. Add the 1/8 tsp salt and 1/8 tsp pepper to the mixture.
In a large mixing bowl, crack and whisk the eggs, and add a pinch of salt. Then add the Parmesan, 1/8 tsp pepper, and milk. Stir gently.
In the pie dish spray the bottom and pour the vegetable mixture inside. Crumble the feta on top then slowly pour the egg mixture and top with mozzarella cheese.
Bake in the oven for 50 minutes or until the top reaches a golden brown.
