Chopped Bulgarian Shopska Salad

A quick and easy salad that can be served for dinner. The feta cheese provides the protein and the savory balsamic glaze brings the sweetness.
Prep Time: 15 minutes


  • 5 Tomatoes, Chopped
  • 5 Red Peppers, Roasted and Chopped
  • 1 English Cucumber, Chopped
  • 1/2 Red Onion, Finely Chopped
  • 1/4 Cup Parlsey, Finely Chopped
  • 1/2 Cup Kalamata Olives, Chopped
  • 1 Cup Feta Cheese, Crumbled
  • Extra Virgin Olive Oil, Drizzle To Taste
  • 3 tbsp Balsamic Vinegar Glaze
  • Salt and Pepper To Taste


  • Roast 3 Red Peppers on the grill or oven.
  • In a medium mixing bowl, chop and add the 3 roasted red peppers and the other 2 red peppers(uncooked), tomatoes, cucumber, red onion, parsley, kalamata olives, and feta cheese. Toss to combine.
  • Next, drizzle the extra virgin olive oil and balsamic glaze.


  • 1 Large Mixing Bowl


If you enjoy spicy food, add a finely chopped jalapeno pepper.
Serve with crusty baked bread.
