5Tomatoes, Chopped
5Red Peppers, Roasted and Chopped
1English Cucumber, Chopped
1/2Red Onion, Finely Chopped
1/4CupParlsey, Finely Chopped
1/2Cup Kalamata Olives, Chopped
1CupFeta Cheese, Crumbled
Extra Virgin Olive Oil, Drizzle To Taste
3tbspBalsamic Vinegar Glaze
Salt and Pepper To Taste
Instructions
Roast 3 Red Peppers on the grill or oven.
In a medium mixing bowl, chop and add the 3 roasted red peppers and the other 2 red peppers(uncooked), tomatoes, cucumber, red onion, parsley, kalamata olives, and feta cheese. Toss to combine.
Next, drizzle the extra virgin olive oil and balsamic glaze.
