Cilantro – Lime Corn Salad

This zesty cilantro-lime corn salad delivers lots of flavor. This side dish can be served with grilled salmon or chicken. This corn salad has fresh ingredients, with a southwestern flare. It is great to bring to a party as a side dish.
Cook Time: 10 minutes

Ingredients 

  • 1 Bag Frozen Corn
  • 1 Red Bell Pepper, chopped finely
  • 1/2 Red Onion, chopped finely
  • 1 Pint Small Cherry Tomatoes, sliced in half
  • 1/4 -1/2 Cup Cilantro, chopped finely
  • 1 Large Avocado, chopped
  • 1 Lime, juiced
  • 1/2 tsp cumin
  • Salt and Pepper To Taste
  • 2 tbsp Extra Virgin Olive Oil

Instructions 

  • Cook frozen corn in the microwave for about 3- 4 minutes.
  • In a large mixing bowl, add the corn, red bell pepper, cherry tomatoes, red onion, avocado and cilantro.
  • Next, add the cumin, lime juice, extra virgin olive oil, and salt and pepper to taste.

Equipment

  • 1 Large Mixing Bowl

Notes

Note: If you like spicy food, you can add a finely diced jalapeno.
