1BagFrozen Corn
1Red Bell Pepper, chopped finely
1/2Red Onion, chopped finely
1PintSmall Cherry Tomatoes, sliced in half
1/4 -1/2Cup Cilantro, chopped finely
1LargeAvocado, chopped
1Lime, juiced
1/2tspcumin
Salt and Pepper To Taste
2tbspExtra Virgin Olive Oil
Instructions
Cook frozen corn in the microwave for about 3- 4 minutes.
In a large mixing bowl, add the corn, red bell pepper, cherry tomatoes, red onion, avocado and cilantro.
Next, add the cumin, lime juice, extra virgin olive oil, and salt and pepper to taste.
