Ingredients
2lbBoneless Skinless Chicken Thighs
3/4 tspSalt
1/2 tspPepper
2tbspOlive Oil
1tbspButter
1Large Onion, Finely diced
Sugar, Pinch of sugar
1Red Bell Pepper
2tbspTomato Paste
2tbspSweet Paprika
1tspCrushed Red Pepper
2tspThyme, Fresh
1CupChicken Broth
1/2CupSour Cream
2tbspFresh Herbs Dill or Parsley, Finely chopped
Instructions
Preheat oven to 350 degrees.
Pat chicken pieces dry with paper towels and season with salt and pepper.
Heat oil and butter in a Dutch oven over medium heat. Add onions and sprinkle with sugar. Cook, stirring frequently, until the onions are very soft and light brown.
Stir in bell peppers, tomato paste, paprika, and crushed red pepper. Add the chicken to the onion mixture. Then add the fresh thyme and chicken broth.
Cover the pot with a tight-fitting lid and cook in the oven for 35- 40 minutes.
Just before the chicken is done, remove and shred the pieces, then add the sour cream.
