1LargeYellow Onion, peeled and quartered
4LargeCarrots, peeled
4LargeCelery, Chopped into 1/2 inch cubes
2LargeParsnips, peeled and halved
6SprigsFresh Thyme
5SprigsFresh Parsley
5SprigsFresh Dill
1/2Head of Garlic
1tbspKosher Salt
1tspWhole Black Peppercorns, Use a small spice bag

To make your homemade broth, in a large stock pot add the whole chicken, 2 celery, 2 carrots, onion, parsnip, and garlic. Then, tie up the herbs (parsley, dill, and thyme) and add salt and pepper. Next, fill the large stock pot with water to cover the chicken and cook on medium heat for 1 hour, and then let it sit and cool for another hour. Once the stock has cooled down, remove everything and place it in a large bowl. In the next step you will slowly build your soup, add all the garlic that was cooked from your stock smash it up, add cooked carrots and parsnips, and throw it back in the stock. Next, the remaining 2 carrots and 2celery stalks are cut up fine. The last step is to remove all the chicken that was boiled in the soup chop it into bite-sized pieces and add to the soup. Cook the soup for about 20 minutes. Note: remember to take the black peppercorns used in the small spice bag it can be hard to get it out of the stock. Last but not least the fresh herbs you tie up for your broth, I like to use them for flavor for the soup, so I add a little back in.
